I’ve done this all my life, but I hadn’t realized that my kids – and my husband – had no idea that you can make a cake in the microwave! In just 12 minutes, we have a yummy microwave cake in any flavor we want. It’s easy, with just 3 ingredients. Seriously! This is something I learned from Tupperware when my mother sold it in the 80’s. We use the Tupperware Stack Cooker which is made for cooking in the microwave.
First, the ingredients. Like I said, easy peasy! All you need is:
- a cake mix, any flavor
- a large can of pie filling, any flavor
- 3 eggs
That’s it! You aren’t going to add the water and oil that you normally would for a microwave cake. I haven’t even been spraying the bottom of the bowl, although you sure can if you want. All you do is mix these three ingredients together in a bowl.
Then take your Tupperware Stack Cooker large casserole bowl and insert the cone. You’ll need the cone in the center because of the way the microwave cooks. If you try to make this cake without it, the center might still be doughy. Pour the batter around the cone and place the cover on top.
Place in the microwave and cook on normal/high power for 12 minutes. Remove from the microwave, and carefully remove the cover. There will be hot steam, so open it away from you and be careful! You’ll want to let it cool for a few minutes, and I’ve been turning it out onto a plate, or you could use a cake taker.
My husband is a professional baker, and he didn’t believe that I could bake a cake in the microwave. I did it, he loved it, and immediately purchased another 3 cake mixes and 3 pie fillings so we could keep eating them! These are a little too convenient, because they take almost no time to prepare, and we have eaten a lot of them in just the past few months.
They’re great to prepare quickly if unexpected company comes by, or if you need to prepare a lot of food. You can make three of these in the time it usually takes to only do one in the oven, and that’s if you only have one microwave.
The cake doesn’t taste rubbery. It bakes all the way through to the center (as long as you remember to use the cone insert). It easily comes out of the bowl; easier if you let it cool first, or use a silicone spatula and slide it down the sides of the bowl to loosen it even warm.
